Garbanzo Beans and Beet Salad
- 1 Beetroot
- 150 grams or more Garbanzo beans (canned)
- 1 as much (to taste) Your choice of nuts (such as cashew nuts, walnuts, etc.), crushed
- 1 dash Italian parsely (finely chopped)
- 2 tbsp Extra virgin olive oil
- 1 tbsp Lemon or lime juice
- 1 tsp Honey (optional)
- Peel the beetroot and grate it.
- In a large bowl, toss together all the ingredients, then it's ready.
- Chill it in the refrigerator and serve.
