Mustard Pork and Mushroom One Pot
- 1 tablespoon olive oil
- 2 onions, chopped
- 8 boneless pork chops
- 3 tablespoons Dijon mustard
- 9 ounces button mushrooms, halved
- 1 14 cups vegetable stock
- 7 ounces spinach, chopped
- Heat the oil in a large pan over a medium heat.
- Add the onions to the pan and fry for 8-10min until they turn soft and golden.
- Smear the pork with the mustard.
- Push the onions to one side of the pan and add the pork.
- Fry for 10-15min until the meat is browned all over.
- Add the mushrooms and stock, season with salt and pepper then cover and cook for 30min.
- Add the spinach and simmer for 5min.
- Serve with mashed potato.
