Sweet Potato Salad with Mustard Dressing

  1. Scrub the skin of the sweet potatoes well and cut them into bite-sized cubes.
  2. Steam them until soft but not too mushy!
  3. Set the sweet potatoes aside in a colander or bowl and let them cool for 20 minutes or so.
  4. Meanwhile prepare the dressing.
  5. Put all the dressing ingredients into a small bowl and mix well.
  6. Adjust taste with salt, pepper and sugar if necessary.
  7. Also, chop up the cilantro/coriander.
  8. Once the sweet potatoes have cooled, put them in a large bowl and toss them in the dressing.
  9. Add the chopped cilantro and mix in lightly.
  10. I like to sprinkle on black sesame seeds to garnish because it goes nicely with the bright color of the Japanese sweet potatoes ^^
