Lumpia (Egg Rolls) Recipe
- 1 pkg. Lumpia skins, separated
- 2 lbs. grnd beef
- 1 lg. onion, minced
- 2 cloves garlic, minced
- 2 c. minced carrots
- 1 c. celery, minced
- 1 can water chestnuts, minced
- 1 cabbage, thinly sliced
- 1/4 c. water
- 1 tbsp. veg. oil
- 1/2 c. soy sauce
- 2 Large eggs, beaten
- 1 teaspoon pepper
- In a skillet, brown beef, drain, set aside.
- Heat veg.
- oil.
- Add in garlic, brown lightly.
- Add in minced onion, stir 2 min.
- Add in minced carrots, stir 5 min.
- Add in water, celery and water chestnuts.
- Mix all together for 10 min.
- Add in beef, soy sauce, and cabbage.
- Mix and cook for 7 min.
- Add in pepper.
- Stir for 1 minute.
- Drain liquid and cold for 2 hrs.
- Mix with Large eggs.
- Roll in lumpia skins.
- Seal edges of skin by brushing water on edge of skin.
- Deep fry 3-4 at a time and serve warm with catsup or possibly sweet and sour sauce.
- Makes 24.
