A Fisherman's Original Recipe: Roughly Flaked Salmon

  1. Cook the salmon in a frying pan, skin side first.
  2. Put a lid on and cook over medium heat.
  3. When the pan starts to make a crackling sound and the skin is crispy, take it off with chopsticks.
  4. Turn the heat down to low.
  5. Flake the salmon as you take off the skin.
  6. Add the sake and mirin, and flake the salmon with a spatula.
  7. Take the bones out.
  8. Add the sesame seeds, taste and add salt if needed, and it's done.
