Football Season Nachos
- 1 bag of yellow corn chips
- 1 bag of blue corn chips
- 2 lb extra lean ground beef
- 1 tbsp olive oil, extra virgin
- 1 whole yellow onion
- 1 can kidney beans
- 1 1/2 cup monterey jack cheese
- 6 roma tomatoes
- 1 sour cream
- 1/2 cup hot water
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/4 ground black pepper
- 1 whole Jalapeno , diced finely
- 1/2 bunch of cilantro
- 1 lime juice
- 1 avocado , pitted & diced
- Brown the meat EVOO & half the Onion until brown.
- Drain the fat
- Seaaon meat & stir to combine .
- Add beans and hot water reduce heat & simmer
- Pico de Gallo : mix other half of onion with tomato, jalapeno, cilantro,lime juice and 1/2 tsp salt .
- Set aside
- In a baking pan layer nachos with meat , chips and cheese alternating colours.
- Bake at 325 until cheese is melted and top with pico de gallo and avocado
- Serve with sour cream & an ice cold beer
