Butterscotch Apricot Streusel Bars

  1. For Filling:.
  2. In a medium saucepan, combing apricots and water.
  3. Cook over medium heat, stirring occasionally until water evapourates and mixture is thickened.
  4. Set aside.
  5. For Cookie Layer:.
  6. Preheat oven to 375.
  7. In a small bowl, combing 1 3/4 cups of flour, oats, salt and baking soda.
  8. Set aside.
  9. In large bowl combine molasses and butter and beat until creamy.
  10. Gradually beat in flour mixture.
  11. Remove 1 cup of mixture and place in small bowl.
  12. Set aside.
  13. Press remaining mixture into foil lined 9 by 13 inch baking pan.
  14. Top with filling and set aside.
  15. Add remaining 1/4 cup flour to reserved mixture, stir until crumbs form.
  16. Stir in butterscotch morsels and sprinkle crumb mixture on top.
  17. Bake at 375 for 20-25 minutes.
  18. Cool completely on wire rack
  19. Cut into 2 by 1 1/2 inch bars.
