Veggie Chili
- 12 cup chopped onion
- 14 cup red bell pepper
- 14 cup green bell pepper
- 1 portabella mushroom cap, chopped
- 16 ounces black beans
- 16 ounces kidney beans
- 32 ounces chili hot beans
- 16 ounces petite diced tomatoes
- 8 ounces crushed pineapple
- 2 teaspoons olive oil
- 1 cup chopped carrot
- 1 stalk celery, chopped
- mild chili powder
- heat oil in pan, cook onion, peppers, carrots, celery and mushrooms until tender, throw all ingredients into crock pot and cook all day on low.
