A Touch Of Mexico Casserole

  1. Combine ground beef, onion and celery in a 2 1/2-quart casserole.
  2. Cover and microwave at High for 7 minutes, or until meat is done.
  3. Stir several times while cooking; drain.
  4. Stir in next 7 ingredients; microwave at High for 5 to 6 minutes, turning dish a half turn after 3 minutes.
  5. Sprinkle with cheese and corn chips.
  6. Microwave at 70% power for 1 minute, or until cheese melts. Yields 6 servings.
