A Touch Of Mexico Casserole
- 1 lb. ground beef
- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 tsp. chili powder
- 1 (12 oz.) can whole kernel corn
- 1 can red kidney beans, drained
- 1/2 c. sliced ripe olives
- 1 (8 oz.) can tomato sauce
- 1/2 c. shredded Cheddar cheese
- 1/2 c. coarsely crushed corn chips
- Combine ground beef, onion and celery in a 2 1/2-quart casserole.
- Cover and microwave at High for 7 minutes, or until meat is done.
- Stir several times while cooking; drain.
- Stir in next 7 ingredients; microwave at High for 5 to 6 minutes, turning dish a half turn after 3 minutes.
- Sprinkle with cheese and corn chips.
- Microwave at 70% power for 1 minute, or until cheese melts. Yields 6 servings.
