Tropical Florentines
- 1/4 cup Land O Lakes Butter
- 1/4 cup sugar
- 3 tablespoons honey
- 1 tablespoon Land O Lakes Heavy Whipping Cream
- 1/4 cup all-purpose flour
- 2/3 cup finely chopped dried tropical fruit
- 1/3 cup chopped slivered almonds
- 1 cup white baking chips
- 1 teaspoon vegetable oil
- Heat oven to 325F.
- Line cookie sheets with parchment paper; set aside.
- Combine butter, sugar, honey and whipping cream in 1 1/2-quart saucepan.
- Cook over medium heat, stirring occasionally, 3-5 minutes or until butter is melted and mixture comes to a boil.
- Reduce heat to medium-low; stir in flour using whisk.
- Continue cooking 3-4 minutes or until mixture is smooth and thickens.
- Remove from heat; stir in fruit and almonds.
- Let stand 10-15 minutes or until cool enough to handle.
- Drop mixture by tablespoonfuls, 3 inches apart, onto prepared cookie sheets.
- Bake 9-11 minutes or until edges of cookies are deep golden brown.
- Let stand on cookie sheets 1 minute.
- Slide parchment paper with cookies onto cooling rack; cool 5 minutes.
- Peel cookies from parchment paper to release.
- Place onto clean parchment or waxed paper.
- Combine white baking chips and oil in bowl.
- Microwave, stirring every 15 seconds, 60-90 seconds or until melted and smooth.
- Drizzle about 1 teaspoon onto each cookie.
- Let stand 30 minutes or until set.
