Sweet and Spicy Chicken Quesadilla

  1. Mix the hot sauce, brown sugar, water, and honey together.
  2. Set aside.
  3. Boil chicken breasts in a pot of water until fully cooked (about 25 minutes if frozen).
  4. When they are done, remove them from the water and shred chicken.
  5. Put shredded chicken in a bowl and pour 1/2 cup of the sauce over the chicken and stir well.
  6. Throw the diced chilies, and diced green onions into the chicken mixture.
  7. Heat griddle or skillet to medium heat.
  8. Lightly spray one side of each tortilla (the side that will be touching the griddle) then place it in your skillet and layer 1/2 cup cheese onto tortilla then 1/2 cup of the chicken mixture.
  9. Top with another tortilla.
  10. Grill for 1-2 minutes on each side.
  11. Continue with the remaining filling and tortillas.
  12. Serve with sour cream, salsa, or hot sauce for dipping.
