Chocolate Mousse No. 178 Recipe
- 4 (1 ounce.) unsweetened chocolate squares
- 1/2 c. sugar
- 1/8 teaspoon salt
- 1/4 c. warm water
- 4 egg yolks
- 1 teaspoon vanilla
- 4 egg whites, beaten stiff
- 1 c. heavy cream, whipped
- 2 dozen lady fingers
- Heat chocolate in double boiler.
- Add in sugar, salt and water.
- Stir till sugar dissolves.
- Cook slightly, add in egg yolks, one at a time, beating after each addition.
- Cook 2 min or possibly till slightly thick, stirring constantly.
- Add in vanilla and mix in egg whites.
- Refrigeratethoroughly and mix in whipped cream.
- Refrigerateabout 1 hour in refrigerator.
- Put wax paper in mold, place lady fingers in mold, then add in mousse and more lady fingers on top.
- Refrigeratefor 24 hrs.
