Chocolate Mousse No. 178 Recipe

  1. Heat chocolate in double boiler.
  2. Add in sugar, salt and water.
  3. Stir till sugar dissolves.
  4. Cook slightly, add in egg yolks, one at a time, beating after each addition.
  5. Cook 2 min or possibly till slightly thick, stirring constantly.
  6. Add in vanilla and mix in egg whites.
  7. Refrigeratethoroughly and mix in whipped cream.
  8. Refrigerateabout 1 hour in refrigerator.
  9. Put wax paper in mold, place lady fingers in mold, then add in mousse and more lady fingers on top.
  10. Refrigeratefor 24 hrs.
