Spicy Sauteed Oyster Mushrooms
- 2 Tbs. olive oil
- 1 medium shallot, finely chopped (3 Tbs.)
- 1 jalapeno pepper, seeded and minced (2 Tbs.)
- 1 clove garlic, minced (1 tsp.)
- 1 1/4 lb. oyster mushrooms, chopped
- 2 tsp. lime juice
- 2 Tbs. chopped cilantro
- Heat oil in large skillet over medium-high heat.
- Add shallot, jalapeno, and garlic, and saute 2 to 3 minutes.
- Add mushrooms, and saute 7 to 9 minutes, or until liquid released by mushrooms has cooked off and mushrooms begin to brown.
- Stir in lime juice, and season with salt and pepper.
- Remove from heat and toss with cilantro.
- Serve warm.
