Spiked Fruit With Star Anise Syrup
- 1 34 cups white sugar
- 1 14 cups star anise
- 3 14 cups water
- 3 12 lbs mixed fruit (e.g. blueberries, cherries, strawberries, papaya, pineapple)
- lightly whipped cream, for serving
- Place sugar, star anise and water in a saucepan.
- Bring to a boil and cook for 7-10 minutes, or until syrupy.
- Let cool.
- Strain out the star anise.
- Return syrup to saucepan and add fruit.
- Poach over moderate heat until warmed through.
- Serve fruit with the syrup and whipped cream.
