Mom's Rice Pudding Recipe
- 3/4 c. rice
- 3 Large eggs
- 1 quart. lowfat milk
- 1/2 teaspoon vanilla
- Sugar to taste
- Healthy pinch of salt
- Cinnamon
- Wash rice.
- In a saucepan put rice and cover with water; add in salt and cook slowly over low flame till almost done.
- Add in lowfat milk, cook till rice is done.
- Beat Large eggs well and gradually add in to rice.
- Place back on stove, cook for 3 min, stirring constantly.
- Remove from flame, add in vanilla and sugar, stir well.
- Sprinkle top with cinnamon and cold.
