Green Pea Soup With Smoked Ham
- 1 tablespoon butter
- 1 large onion, chopped
- 2 (14 ounce) cans chicken broth
- 1 (14 ounce) package frozen mashed potatoes
- 2 cups frozen peas
- 1 teaspoon dried tarragon
- 1 12 cups milk or 1 12 cups light cream
- 14 teaspoon pepper
- 6 ounces smoked ham, finely diced
- In large saucepan, melt butter.
- Add onion and cook until softened.
- Add chicken broth, potatoes, peas, tarragon and 1 1/2 cups water.
- Bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.
- Pulse soup in food processor or blender.
- Return puree to saucepan.
- Stir in milk and season with pepper.
- Ladle into bowls and top with ham.
