Green Pea Soup With Smoked Ham

  1. In large saucepan, melt butter.
  2. Add onion and cook until softened.
  3. Add chicken broth, potatoes, peas, tarragon and 1 1/2 cups water.
  4. Bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.
  5. Pulse soup in food processor or blender.
  6. Return puree to saucepan.
  7. Stir in milk and season with pepper.
  8. Ladle into bowls and top with ham.
