Cucumber Raita

  1. Grate the cucumber, and sprinkle a little salt on top.
  2. Put the yogurt in a bowl, starting with 3/4 cup, and beat until smooth.
  3. Pat the cucumber dry with a paper towel, and mix in with the yogurt.
  4. Add a small pinch of cayenne, if using (I like it without if I am eating this with something highly seasoned), and more salt to taste.
  5. Sprinkle cumin and a light dusting of paprika on top.
