Bulgur Fruit Salad
- 1 cup bulgur, uncooked
- 2 cups beef bouillon, boiling
- 1 cup honeydew melon, diced
- 1 cup grapes
- 1 cup raspberries
- 1 cup jicama, cut into match sticks (or substitute celery)
- 14 cup fat-free honey mustard dressing (or to taste)
- Put the bulgur in a bowl and stir in the boiling bouillon.
- Let stand 15 minutes or until most of the liquid is absorbed.
- Chill if desired.
- When ready to serve, stir in the remaining ingredients.
