Artichokes With Vinaigrette

  1. cut off artichokes stems and snap off leaves near bottom end.
  2. cover base with lemon slice and secure with kitchen string.
  3. place aritchokes in large pot containing at least 8 cups salted boiling water.
  4. partly cover and cook 40 to 50 minutes over med heat, depending on size.
  5. when cooked (center leaves should pull free easily) drain well and squeeze out excess water.
  6. seperate leaves on platter and remove and discard fuzzy choke.
  7. place artichoke bottoms with leaves.
  8. Serve with vinaigrette.
