Artichokes With Vinaigrette
- 4 large artichokes, washed
- 4 slices lemons
- 1 12 cups vinaigrette
- cut off artichokes stems and snap off leaves near bottom end.
- cover base with lemon slice and secure with kitchen string.
- place aritchokes in large pot containing at least 8 cups salted boiling water.
- partly cover and cook 40 to 50 minutes over med heat, depending on size.
- when cooked (center leaves should pull free easily) drain well and squeeze out excess water.
- seperate leaves on platter and remove and discard fuzzy choke.
- place artichoke bottoms with leaves.
- Serve with vinaigrette.
