Salmon Tartar with Crispy Toast
- 200 grams Lightly Smoked Salmon
- 150 grams Cottage Cheese, Drained
- 2 teaspoons Capers, Finely Chopped
- 4 stalks Spring Onions, Finely Chopped
- 1 teaspoon Green Peppercorns In Brine, Drained And Crushed
- 2 teaspoons Very Mild Mustard
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Gin Or Vodka Clear, Without Any Flavour
- White Bread And Lime Wedges, To Serve
- Cut salmon into very small pieces.
- Add drained cottage cheese, finely chopped capers, finely chopped spring onions, smashed peppercorns, mustard, olive oil, and gin or vodka.
- Mix together.
- Toast white bread and serve with salmon tartare and lime wedges.
- Recommended wines: Sauvignon Blanc, Chardonnay.
