Beasley'S Champion 1987 Apple Pie
- 4 c. plus 2 Tbsp. unsifted flour, divided
- 2 Tbsp. plus 1 c. sugar, divided
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 2/3 c. lard
- 1 large egg, slightly beaten
- 1 Tbsp. white vinegar
- 1/2 c. ice water
- 6 to 7 Jonathan apples
- 1 tsp. lemon juice
- 1/2 tsp. cinnamon
- 1/4 c. water
- 5 to 6 thin slices butter
- In a large bowl, stir together 4 cups unsifted flour, 2 tablespoons sugar, baking powder and salt, mixing well.
- Using a pastry blender, cut in lard until mixture is crumbly and particles are about the size of small peas.
- Stir together egg, vinegar and 7 tablespoons ice water; mix well.
- Pour egg mixture all at once into flour mixture.
- Stir with a fork until it begins to clump together. Add remaining 1 tablespoon water, if needed, to make dough clump.
