Ukrainian Lokshyna and Spinach Casserole (egg noodle)

  1. Combine the cooked noodles with the butter, cheese, and salt.
  2. Squeeze the spinach dry and then chop it.
  3. Cook the onion in the butter until tender.
  4. Add the spinach.
  5. Season to taste with salt and pepper.
  6. Arrange the noodles and spinach in alternate layers in a buttered baking dish.
  7. Top with the buttered bread crumbs.
  8. Bake in a moderate oven (350 degrees F.) for about 35 minutes.
  9. Serve this dish garnished with hard cooked eggs.
