Chocolate Mint
- 2 cups flour, unbleached all-purpose
- 1 1/2 cups sugar granulated
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3/4 cup water cold
- 1/2 cup applesauce at room temperature
- 1/2 teaspoon mint extract
- 7 each egg whites whipped
- 1 x mints
- 3 cups heavy whipping cream chilled
- 1 1/2 cups powdered sugar
- 3/4 cup cocoa powder
- 1 1/2 teaspoons mint extract
- Preheat oven at 350F (180C).
- Prepare pans with cooking spray and flour.
- In a mixing bowl, combine flour, sugar, baking powder, baking powder and salt.
- In another mixing bowl, combine water, applesauce, peppermint extract, egg whites.
- Divide batter between prepared pans.
- Bake until top springs back when touched lightly, about 50 to 55 minutes depending on pan size.
