Easy and Flavourful Canned Tomatoes

  1. You will need 12 one litre jars or 1.5 litre jars washed and sterilized.
  2. Set out your jars and place the following in the bottom of the jar:.
  3. 1/2 teaspoon of rock salt.
  4. one round of fresh ground pepper.
  5. 1/8th teaspoon of whole peppercorns.
  6. 1 garlic clove skinned (if they're really big - cut in 1/2).
  7. 1 basil leaf.
  8. 1 sprig of greek oregano.
  9. teaspoon of italian parsley.
  10. top up jar with blanched/skinned tomatoes just under the neck of the jar.
  11. remove air bubbles with a chopstick.
  12. dry rims of jars and seal.
  13. process in boiling hot water just covered for 33 minutes.
