Mom's Paleo Stir-Fry

  1. In a wok or large saute pan, heat olive oil to medium high and saute the chicken until cooked.
  2. Remove from pan and set aside.
  3. In the same pan, saute the green onions and garlic.
  4. Add the bell pepper, zucchini, squash, carrot, mushrooms, and asparagus.
  5. Stir until the vegetables are crisp tender.
  6. Add coconut aminos and sesame oil, to taste.
  7. Stir.
  8. Add spinach and stir until it wilts.
  9. Enjoy!
