Hawaiian Supper
- 1 can (15 1/4 oz.) chunk pineapple in juice
- 1 Tbsp. vinegar
- 2 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. salt
- 2 Tbsp. margarine or butter
- 1/2 lb. cooked ham, thin strips
- 1/2 lb. uncooked chicken, thin strips
- 1 medium green pepper, cut in strips
- 2 Tbsp. sliced scallions (optional)
- 1/4 tsp. garlic powder
- 1 1/2 c. Minute rice
- Drain pineapple juice into measuring cup, add water to juice to make 1 1/2 cups.
- Stir measured liquid, vinegar, brown sugar, cornstarch and salt in bowl.
- Heat margarine in large skillet. Cook and stir ham, chicken, green pepper, scallions and garlic powder unti chicken is lightly browned.
- Stir juice mixture to blend; pour into skillet.
- Bring to a boil.
- Stir in pineapple and rice; cover.
- Remove from heat.
- Let stand 5 minutes.
- Fluff with fork.
