Malibu Chicken Bundles
- 4 (4 ounce) boneless skinless chicken breasts
- 12 cup honey dijon mustard, divided
- 4 thin slices deli ham
- 4 slices provolone cheese or 4 slices swiss cheese
- 1 (8 ounce) canunsweetened crushed, pineapple
- 1 12 cups panko breadcrumbs (Japanese)
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 (10 1/2 ounce) can cream of chicken soup
- 14 cup sour cream
- 18 teaspoon dried tarragon, parsley or 18 teaspoon dill weed
- Flatten chicken breasts to 1/4" thickness (I just bought the thinly sliced breasts and didn't flatten).
- Spread 1 tablespoon mustard over each; layer with ham, cheese, and well drained pineapple.
- Fold chicken over pineapple; secure with toothpicks.
- Brush bundles with remaining mustard.
- In a shallow bowl, combine bread crumbs; place in an 11"x7"x2" baking dish coated with cooking spray.
- Bake, uncovered, at 350 degrees for 45-50 minutes.
- Discard toothpicks.
- Meanwhile, in a small saucepan, combine the sauce ingredients.
- Cook, stirring occasionally, until heated through.
- Serve with the chicken.
