Pepperoni & Mushroom pizza

  1. Combine sauce ingredients and simmer until thickens and sit aside to cool.
  2. Place yeast pkg in 1 cup warm water with a pinch of sugar and allow to sit for 10 mins, meanwhile place flour, salt, and olive oil in mixture in mixing bowl and pour yeast mixture in.
  3. With dough hook mix together until dough pills away from side of bowl.
  4. Next roll dough out on a floured surface and knead for 7 minutes.
  5. In a bowl add another splash of olive oil and place dough and cover with cling film.
  6. Allow to rise for hour.
  7. After hour punch down risen dough.
  8. Allow to rise for another hour.
  9. After second rise knead dough with a bit more flour until a smooth ball forms.
  10. Divide into two and freeze second dough ball til you need it.
  11. Roll out dough, place o izza stone in over on 500 for about an our before you put pizza in oven.
  12. Place cornmeal on bottom of pizza pan.
  13. Add thin layer of pizza sauce, cheese and toppings.
  14. Cooking pizza on pizza pan about 15 mins and then dump onto clay stone after crust cooks halfway on bottom.
  15. Continue to cook until brown, bubbly and cheesy!
