Seafood Chowder
- 12 lb shrimp
- 12 lb clam
- 12 lb bacon
- 20 ounces Simply Potatoes Diced Potatoes with Onion
- 12 cup carrot
- 1 cup frozen corn
- 7 tablespoons butter
- 14 cup flour
- 4 cups 2% low-fat milk
- 1 cup clam juice
- 14 teaspoon ground black pepper
- 12 teaspoon salt
- 18 teaspoon cayenne pepper
- Saute shrimp and clams in 2 tablespoons of butter over medium heat for 5 minutes.
- Remove shrimp and clams from skillet.
- In same skillet add diced bacon and cook until crispy and crumbly.
- Add diced potatoes with onions and carrots and saute stirring frequently for 5 minutes.
- In a large stockpot melt the remaining stick of butter.
- Once melted stir in the flour and mix until no lumps remain.
- Over medium heat add the milk and clam juice and bring to a boil stirring frequently.
- Stir in the seafood, vegetables and spices and turn to a simmer for 30 minutes.
