Angelina's Lemon Cookies (Sicily 1911) Recipe
- 1/2 c. Crisco
- 1 1/3 c. Sugar
- 3 x Egg
- 1 1/2 tsp Lemon extract
- 3 x heaping tsp. Baking pwdr
- 4 c. Flour
- 1 c. Lowfat milk Frosting
- 1 c. Confectioner's sugar
- 1/4 tsp Salt
- 1/2 tsp Vanilla
- 1 1/2 Tbsp. Cream Sprinkles
- Cream shortening and sugar together.
- Beat in Large eggs one at a time.
- Add in lemon extract.
- Sift flour and baking pwdr together.
- Add in to wet ingredients, alternating with lowfat milk.
- Roll into balls and bake @425 for 7 min.
- When cold, frost and add in sprinkles.
- To make frosting, mix confectioners sugar, salt, vanilla.
- Adding cream till you get a good thick consistency.
- You can substitute Anise flavoring for the lemon extract.
