Spicy Tequila Lime Shrimp Tacos
- 1/4 cups Tequila
- 1/4 cups Lime Juice
- 2 Tablespoons Cholula Hot Sauce, Adjusted For Spice Preference
- 2 cloves Garlic, Minced
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 Tablespoon Olive Oil
- 1 pound Shrimp, Peeled, Deveined And Tails Removed
- 1/2 whole Onion, Sliced
- 1 package Flour Tortillas Or Your Favorite Taco Shell, 8-10 Count
- 1 whole Tomato, Diced
- 2 whole Avocados, Peeled, Pitted And Diced
- Garnishes: Salsa And Shredded Cheddar Cheese (optional)
- In a medium sized bowl, mix together tequila, lime juice, hot sauce, garlic, salt, pepper and olive oil to make shrimp marinade.
- Add shrimp and marinate it in the refrigerator for about 30 minutes.
- Preheat a grill pan to medium high heat (you can of course use a real grill, but just place the shrimp on skewers if you do).
- Once the pan is pre-heated place shrimp and the sliced onions on the grill pan, pouring some of the marinade over the top.
- Cook shrimp until they are opaque and cooked through, rotating once.
- It should be about 7 minutes.
- Remove shrimp from grill pan and let the onions cook a few more minutes.
- Assemble tacos by topping a tortilla with shrimp, tomatoes, avocados, onions and a little more hot sauce if you want more heat.
- Garnish with shredded cheese and salsa if desired.
- Enjoy!
