Coffee, Cashew, White Chocolate Blondies

  1. Preheat oven to 350F (metal) or 325 F (glass).
  2. Coat a 9- by 9-inch baking pan with cooking spray.
  3. In a medium bowl, combine the hot water, instant coffee and vanilla.
  4. Stir until the coffee granules dissolve.
  5. Add the butter, brown sugar and salt.
  6. Use an electric mixer to beat until light and fluffy.
  7. Add the eggs, one at a time, beating between additions and scraping down the sides of the bowl.
  8. Stir in the flour, then the white chocolate bits and cashews.
  9. Spread the mixture evenly into the prepared pan.
  10. Bake for 35 to 40 minutes or until a toothpick inserted at the center comes out clean.
  11. Cool, then cut into 9 squares.
