Peru Caramel Milk Dessert (Crema de Caramel)

  1. Soak the raisins in the rum for a hour.
  2. Combine the condensed milk, fresh milk, cinnamon, cloves, and baking soda.
  3. Bring to a boil over high heat, stirring constantly.
  4. Remove from the heat.
  5. Place the sugar and water in a saucepan.
  6. Bring to simmering point, stirring constantly until the sugar dissolves.
  7. Pour in the hot milk mixture and mix well.
  8. Cook over low heat, stirring occasionally, for 1 1/4 hours until the pudding is thick and amber colored.
  9. Add the rum soaked raisins and refrigerate until well chilled.
