Shrimp and Tomato Cold Noodles with Sesame Sauce

  1. Combine the ingredients for the sesame dipping sauce in a bowl and chill in the refrigerator.
  2. Cut a shallow X on the bottom of the tomato.
  3. Bring a pot of water to a boil and drop the tomato and cook for 30 seconds until the skin starts to peel.
  4. Take out of the hot water immediately afterwards, and bathe in ice-cold water.
  5. Remove the skin and cut into thin wedges.
  6. Cut the mizuna greens into 5 cm pieces.
  7. Remove the shell and vein from the shrimp.
  8. Cook in a boiling water and drain.
  9. Cook the noodles according to the directions on the package and rinse under cold water then drain well.
  10. Divide the noodles among 2-3 plates.
  11. Pour an equal amount of sesame sauce over each plate.
