TexasTortilla Soup
- 2 tablespoons butter
- 12 cup oil
- 1 large onion, chopped
- 1 fresh jalapeno, seeded and chopped
- 4 garlic cloves, minced
- 2 large carrots, diced
- 6 celery ribs, diced
- 1 lb diced raw chicken
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- 3 teaspoons hot red pepper sauce
- 14 cup flour
- 1 (14 ounce) can diced tomatoes
- 4 (10 1/2 ounce) cans low sodium chicken broth
- Heat butter and oil in a large kettle and saute chopped onion, jalpeno, garlic, carrots, celery and chicken; simmer 5 minutes.
- Combine with cumin, chili powder, salt, lemon pepper, hot pepper sauce and flour.
- Add tomatoes and chicken stock and simmer 1 hour.
- Optional - top with tortilla chips, sour cream, diced avocado and/or grated cheddar cheese.
