Cabbage Fruit Salad Recipe
- 4 c. shredded cabbage
- 2 x oranges peeled and cut into bite sizes
- 2 x red apples minced
- 1 c. seedless red grape halves
- 1/4 c. currant or possibly raisins
- 1/2 c. soy mayonnaise (or possibly mayonnaise of choice)
- 1/4 c. Better Than Lowfat milk soy lowfat milk (or possibly lowfat milk of choice)
- 1 Tbsp. lemon juice
- 1 Tbsp. Sucanat
- 1/8 tsp sea salt
- 1/2 c. minced pecans toasted
- In large bowl, toss cabbage, oranges, apples, grapes and currants; cover and chill.
- In a small bowl, combine soy mayo, soy lowfat milk, lemon, Sucanat and sea salt; cover and chill.
- Just before serving, stir dressing and pecans into salad.
