Twice Baked Potatoes
- 6 large potatoes
- 3 Tbsp. butter
- 1 c. dairy sour cream
- 2 boiled eggs
- 1 Tbsp. chopped onion
- 1 c. English cheese
- salt and pepper to taste
- Parmesan cheese
- parsley flakes
- sour cream
- Clean and butter 6 large potatoes.
- Prick the skins before baking.
- Bake at 400u0b0 for 1 hour.
- Cut potatoes:
- Slice lengthwise on top of each spud.
- Carefully scoop out the insides.
- Set aside shells.
- Mash potatoes while hot.
- Add butter, dairy sour cream (can use more) and boiled eggs.
- Beat until fluffy.
- Stir in chopped onion and English cheese.
- Salt and pepper to taste.
- Pile mashed potatoes in shells and sprinkle top with Parmesan cheese, parsley flakes and sour cream.
- Bake at 350u0b0 until lightly brown.
