Grilled Tomato Sauce on Barbecue

  1. Put the barbecue to high heat.
  2. In a big bowl, mix tomatoes and 2/3 cup of oil.
  3. Salt and pepper.
  4. Put enough pieces of tomatoes on the grill to cover it completely and grill about 5 minutes on each side.
  5. Remove from the grill and put on a baking sheet.
  6. Let cool down.
  7. Grill this way all the tomatoes, then peel them with fingers and press carefully to remove the seeds.
  8. Set aside in a bowl.
  9. Mash coarsely tomatoes with hands or a mash potatoes.
  10. In a big casserole, tenderize onion and garlic in the remaining oil.
  11. Add the peeled tomatoes and bay leaves.
  12. Bring to boil and let simmer to medium heat for about 2 minutes stirring frequently.
  13. Salt and pepper.
  14. Add the basil.
  15. Adjust seasoning.
  16. Serve on pasta.
