Cuban black beans and rice
- 3 3/4 cup vegetable broth
- 1 1/2 cup rice
- 1 each onion, chopped
- 1 each jalapeno, seeded and chopped
- 3 clove garlic, minced
- 1 tsp salt
- 2 can black beans
- 1 tbsp lime juice
- 2 tsp cumin
- In large pot, add broth cumin, and salt.
- Add rice.
- Cook until most if water has evaporated, then cover and reduce heat.
- Sautee onions, garlic, and jalepeno in small pan until tender.
- Add to broth.
- In separate pot, heat black beans and lime juice.
- Top with sour cream and green onions if desired.
