Spiralize sweet potato chicken casserole

  1. Preheat oven 400.Add 8 dried chilies to a pot of boiling water.
  2. Bring to a rolling simmer and cover.
  3. Cook about 5 minutes.
  4. Add tomatoes and cook together for 12 minutes at medium simmer.

  6. While thats boiling saute onions and garlic.
  7. Cook about 5 minutes.
  8. Set aside.
  9. Take out chilies and tomatoes.
  10. Cut stim and deseed chilies.
  11. Take the skin off the tomatoes.
  12. Add to a blender.
  13. Blend to smooth.
  14. Add onions.
  15. Add cumin , salt and pepper
  16. Add shredded chicken, black beans, and corn .
  17. Mix.
  18. Add sauce.
  19. Mix .
  20. Spiralize your sweet potatoes.
  21. Add into a casserole dish.
  22. Pour chicken mix on top of spiral potatoes.
  23. Add cheese on top .
  24. Cover with aluminum foil and cook for 55 minutes.
  25. Enjoy
