Spiralize sweet potato chicken casserole
- 2 sweet potatoes spiralize
- 12 oz chicken shredded
- 8 dried chilies
- 1 can black beans, drained rinsed
- 4 large tomatoes on a vine
- 1 large onion quatered
- 3 clove garlic cloves
- 1 1/2 cup mexi cheese
- 1 tbsp cumin
- 1 cup corn frozen
- Preheat oven 400.Add 8 dried chilies to a pot of boiling water.
- Bring to a rolling simmer and cover.
- Cook about 5 minutes.
- Add tomatoes and cook together for 12 minutes at medium simmer.
- ** cook chicken in water if you dont have left over shredded chicken in the fridge **
- While thats boiling saute onions and garlic.
- Cook about 5 minutes.
- Set aside.
- Take out chilies and tomatoes.
- Cut stim and deseed chilies.
- Take the skin off the tomatoes.
- Add to a blender.
- Blend to smooth.
- Add onions.
- Add cumin , salt and pepper
- Add shredded chicken, black beans, and corn .
- Mix.
- Add sauce.
- Mix .
- Spiralize your sweet potatoes.
- Add into a casserole dish.
- Pour chicken mix on top of spiral potatoes.
- Add cheese on top .
- Cover with aluminum foil and cook for 55 minutes.
- Enjoy
