Spinach Puff

  1. In a food processor, combine spinach, onion, Parmesan and nutmeg.
  2. Puree until smooth.
  3. Beat egg white with lemon juice until stiff.
  4. Fold in spinach.
  5. Pour mixutre into an 8 ounce custard cup or souffle dish, buttered on bottom only.
  6. Microwave on high for 2 minutes, or until puffed and set.
  7. Let cool slightly before eating.
