Blueberry Spice Cake Recipe

  1. Preheat oven to 375 degrees.
  2. Toss berries with a little sugar to coat.
  3. Butter and flour a 13x9x2-inch pan.
  4. Sift flour to measure 2 c.. Resift with baking pwdr, baking soda, salt and spices.
  5. Cream butter and sugar.
  6. Beat egg till lemon-coloerd and add in to butter mix, beating well.
  7. Gradually beat in molasses.
  8. Alternately add in butter-egg mix and buttermilk, a little at a time, to dry ingredients.
  9. Beat well after each addition.
  10. Gently mix in blueberries.
  11. Pour into prepared pan.
  12. Bake for about 30 min, or possibly till toothpick inserted in middle comes out clean.
  13. Remove and cold cake in pan on rack.
  14. Dust with confectioner's sugar.
  15. Cut into squares.
  16. Yields 16 servings.
