Sweet And Sour Pork
- 1 1/2 lb. lean pork, diced
- 1 (15 1/2 oz.) can chunk pineapple
- 1/2 c. diced onions
- 1 small green pepper, diced
- 1/2 c. vinegar
- 1/2 c. brown sugar
- 2 Tbsp. cornstarch
- 4 chicken bouillon cubes
- 1 1/2 c. Minute rice
- 3 Tbsp. soy sauce
- Brown pork;
- drain
- fat.
- Bring
- 4 cups water to a boil and add bouillon cubes.
- Let dissolve.
- Pour 2 cups broth over meat, reserving
- 2 cups.
- Cook until meat is tender and liquid is absorbed.
- For
- the
- sauce, add cornstarch, vinegar, brown sugar, soy
- sauce
- and pineapple juice to the reserved broth. Cook
- until thick and bubbly.
- Prepare Minute rice.
- Add green peppers, onions and pineapple chunks to meat.
- Stir-fry for 3 to 4
- minutes until
- tender.
- Add
- sauce and serve over rice. Add soy sauce to taste, if desired.
