Creamy Sweet Potato Soup

  1. Put 5 cups of water in a large pot over high heat.
  2. Cover and bring to a boil.
  3. While the water heats, peel the carrots and chop them into 1-inch cubes.
  4. Add them to the water.
  5. Repeat with the sweet potatoes.
  6. Stem the jalapeno pepper; remove seeds and mince.
  7. Add to the pot along with salt and pepper.
  8. When the water comes to a boil, lower the heat and simmer 30 minutes.
  9. The potatoes should be soft.
  10. Use a slotted spoon to transfer the potatoes to a blender and blend until smooth, adding the cooking liquid as you blend.
  11. Reheat the soup.
