Beef & Cheese Chimichangas
- 1 (BEEF CHIMICHANGA)
- 1 tbsp Oil
- 500 grams Lean ground beef
- 495 grams Burrito kit
- 3 stick Spring onion, sliced
- 1/4 cup Slivered almonds
- 1 cup Grated cheddar cheese
- 1/4 cup Slivered almond (extra), toasted
- 1 stick Spring onion (extra), sliced
- Preheat oven to 180*C.
- Heat oil in a large non stick fry pan, add mince and cook well until well browned.
- Stir in burrito seasoning mix, 1/4 cup water, shallots and 1/4 cup almonds.
- Simmer for 3 minutes.
- Cool, then fold through cheese.
- Open burrito tortilla pack, throw away freshness sachet.
- Microwave tortillas in pouch on high for 30 seconds to make tortillas more flexible.
- Spoon 1/3 cup mince mixture into centre of tortilla.
- Moisten edges slightly, fold all ends in like a parcel and turn over.
- Brush Chimichangas with oil and place on baking tray lined with baking paper.
- Bake for 15/20 mins or until golden brown.
- Serve topped with salsa and extra shallots and toasted almonds.
