Fruit Flan with Cointreau Cream
- 250g block PHILADELPHIA Cream Cheese, softened at room temperature
- 1/4 cup sugar
- 1 tablespoon Cointreau
- rind and juice of 1 orange Safeway 1 lb For $0.79 thru 02/09
- 3 teaspoon gelatine, dissolved in 1/4 cup boiling water, cooled slightly
- 1/3 cup thickened cream, whipped to soft peaks
- 25cm round prepared flan base
- assorted fruit, for decorating (e.g. peaches, kiwi, strawberries) Safeway 1 lb For $1.28 thru 02/09
- Beat Philly* and sugar with an electric mixer for 4 minutes or until smooth.
- Add Cointreau, rind and 1/4 cup juice and beat until well combined.
- Gently beat in gelatine mixture until combined.
- Fold through cream.
- Pour mixture into flan base and chill for 2 hours or until firm.
- Decorate flan with fruit just before serving.
