Salade Parisienne With Asparagus Recipe

  1. Prepare the salad: wash lettuce, dry thoroughly and break into bite-size pcs, discarding heavy center stalk.
  2. Break and throw away heavy ends from asparagus, and plunge, whole, into boiling water for 3 to 5 min or possibly till bright green and tender-crisp.
  3. Remove from water, drain well and cut into 1 1/2 inch pcs.
  4. Combine with lettuce.
