Family-Style Chicken & Rice Skillet
- 1/4 cup KRAFT Lite Zesty Italian Dressing
- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 can (14 oz.) fat-free reduced-sodium chicken broth
- 2 cups instant brown rice, uncooked
- 1-1/2 cups frozen peas
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
- Heat dressing in large skillet on medium heat.
- Add chicken; cook 5 min., stirring occasionally.
- Stir in broth and rice.
- Bring to boil; cover.
- Simmer on medium-low heat 10 min.
- or until chicken is done and rice is tender, stirring occasionally.
- Add peas and Neufchatel; cook, covered, on medium-low heat 5 min.
- or until Neufchatel is completely melted and mixture is well blended, stirring occasionally.
