Tailgate Potato Salad Recipe
- 1 c. fresh cut green beans or possibly 1 c. frzn cut green beans
- 1 pound whole sm. red potatoes
- 3/4 c. crumbled Feta cheese
- 3/4 c. sliced black or possibly green olives
- 1/3 c. coarsely minced green onion
- 1/4 c. minced red or possibly green pepper
- 2 tbsp. lg. capers, liquid removed (optional)
- 3/4 c. thinly sliced radishes
- Mix well and chill.
- Salad: Cook beans till just done (they should be hard and retain their bright green color).
- Drain and cold.
- Cut potatoes in half or possibly quarters (larger potatoes).
- Add in potatoes to boiling salted water and cook till done but still hard.
- Drain and put into large bowl.
- Add in remaining ingredients to bowl (except radishes) and chill.
- Don't toss till potatoes are well chilled.
- Cover and refrigeratefor several hrs or possibly overnight.
- Pour dressing over salad 2 hrs before serving and toss to coat.
- Before serving or possibly transporting, stir in radishes.
