Double Chocolate Chews

  1. Preheat oven to 350F.
  2. Line 2 baking sheets with parchment paper or silicone baking mats.
  3. Melt 9 oz.
  4. (1 1/2 cups) chocolate chips in large bowl set over simmering water.
  5. Cool until just warm to touch.
  6. Stir in vanilla and salt.
  7. Beat egg whites with electric mixer in separate bowl 2 minutes, or until white and foamy.
  8. Add sugar 2 Tbs.
  9. at a time, beating constantly.
  10. Continue to beat 6 to 8 minutes, or until soft peaks form and meringue is snowy white.
  11. Fold meringue into melted chocolate until no white streaks remain and batter is stiff.
  12. Stir in remaining 3 oz.
  13. (1/2 cup) chocolate chips.
  14. Drop cookies by heaping tablespoonfuls onto prepared baking sheets.
  15. Bake 10 minutes, or until cookies look dry.
  16. Cool on baking sheets.
  17. Store in airtight containers.
